- 3 large carrots (peeled & chopped)
- 2 cloves garlic (minced)
- 8 cups chicken broth
- 2 cups shredded cooked chicken
- 2 (9 ounce) packages refrigerated cheese tortellini
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large soup pot, heat olive oil over medium-high heat. Add chopped onion and sauté for about 5-7 minutes until lightly browned.
- Stir in the celery, carrots, garlic, and Italian seasoning. Cook for another few minutes until fragrant.
- Pour in the chicken broth, bring to a boil, then reduce to a rapid simmer for about 10 minutes until vegetables are softened.
- Add shredded chicken and cheese tortellini, cooking for an additional few minutes until tortellini are tender.
- Season with salt and pepper to taste. Garnish with chopped parsley before serving.
