Ingredients

  • 1.5 pounds store-bought pizza dough
  • ½ scant cup extra virgin olive oil
  • 8 cloves garlic, chopped
  • 4 sprigs fresh rosemary, leaves removed and chopped
  • Flaky salt

Instructions

  1. Allow the pizza dough to come to room temperature in a lightly greased bowl.
  2. Cut the dough into 12 even pieces using a bench scraper or knife.
  3. Grease a muffin pan by pouring 1 teaspoon of olive oil into each cup.
  4. Shape each piece into rough balls and place them in the oiled muffin cups.
  5. Cover the muffins with a towel and let them rest near a preheating oven set at 400°F.
  6. Heat the remaining olive oil over medium heat; add chopped garlic and rosemary when hot, stirring until sizzling stops.
  7. Spoon the herb oil over each dough ball and press gently to create dimples for holding flavor.
  8. Sprinkle flaky salt on top before baking for 14-16 minutes or until golden brown.
