Ingredients

For the Cod:
4 cod fillets (about 5 oz each)
1 tbsp olive oil or sesame oil
Salt and pepper to taste
1 tbsp cornstarch (for lightly coating the fillets)

For the Ginger Soy Glaze:
¼ cup low-sodium soy sauce
1 tbsp honey or maple syrup
1 tbsp rice vinegar
1 tbsp fresh ginger, finely grated
2 cloves garlic, minced
1 tsp sesame oil
1 tbsp water
1 tsp cornstarch (mixed with water to thicken sauce)

For Garnish & Serving:
1 tbsp sesame seeds
2 green onions, thinly sliced
Steamed jasmine rice or soba noodles
Steamed bok choy or broccoli
Lime wedges (optional)


Instructions

Step 1: Prepare the Fish
Pat cod fillets dry with a paper towel.
Season both sides with salt and pepper.
Lightly dust each piece with cornstarch. This helps create a golden crust and allows the glaze to stick.

Step 2: Make the Ginger Soy Glaze
In a small bowl, mix soy sauce, honey, rice vinegar, ginger, garlic, sesame oil, and water.
Transfer to a small saucepan and bring to a simmer over medium heat.
Stir in cornstarch slurry and cook for 1–2 minutes, until the sauce thickens. Set aside.

Step 3: Sear the Cod
Heat olive oil or sesame oil in a large skillet over medium-high heat.
Add the cod fillets and cook for about 3–4 minutes on each side, or until golden and opaque throughout.
Avoid moving the fish too much to get a good sear.

Step 4: Glaze the Fish
Once the fish is nearly done, reduce the heat to low.
Spoon or brush the thickened ginger soy glaze generously over each fillet.
Let the glaze bubble for 1–2 minutes with the fish to lock in the flavor.

 

Step 5: Garnish and Serve
Transfer the cod to a serving plate.
Sprinkle with sesame seeds and green onions.
Serve immediately with rice, noodles, or steamed veggies and lime wedges on the side.
