  • ½ cup crumbled feta cheese

  • 1 tsp basil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dill
  • 1 tsp parsley
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup dried orzo pasta
  • 1 lemon (zest and juice)
  • Olive oil
  • 2 tbsp parmesan cheese (optional, grated or shredded)
  • ½ tsp oregano
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp dill

Instructions

  1. In a large mixing bowl, combine ground chicken, egg, feta, oregano, basil, onion powder, garlic powder, dill, parsley, salt, and pepper. Mix gently and form into 15 meatballs.
  2. Heat olive oil in a non-stick frying pan over medium heat. Add meatballs and cook until browned on all sides (about 5-6 minutes).
  3. Cover the pan and cook for another 5-6 minutes until fully cooked (internal temperature should reach 165°F).
  4. In another bowl, combine cooked orzo with lemon zest, lemon juice, olive oil, parmesan (if using), and seasonings.
  5. Serve meatballs over the lemon orzo and enjoy!
