Ingredients
- 4 cups cooked white rice (chilled)
- 2 large boneless skinless chicken breasts (diced)
- 3 eggs
- 1 cup peas and carrots
- 2 tablespoons vegetable oil
- 4 tablespoons butter
- 1.5 tablespoons soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 cup teriyaki baste and glaze
Instructions
- In a skillet over medium-high heat, add vegetable oil and diced chicken seasoned with onion powder, garlic powder, and paprika. Cook for about 7–8 minutes until the chicken reaches an internal temperature of 165°F. Remove from pan.
- In the same skillet, melt butter and add peas and carrots. Crack in eggs and scramble until fully cooked.
- Stir in chilled rice, soy sauce, cooked chicken, and teriyaki glaze. Cook together for approximately 4–5 minutes while stirring frequently. Season with salt and black pepper to taste.
- Serve hot with optional yum yum sauce or chopped green onions as garnish.
