- 10.5oz / 300g fresh Tortellini
- 1 cup each: Onion, Carrot, Celery, Courgette/Zucchini
- 4 cloves Garlic (finely diced)
- 2 cans (14oz/400g each) Chopped Tomatoes
- 4 cups / 1 liter Chicken Stock (or vegetable stock)
- 1/4 cup / 75g Tomato Puree
- Fresh Basil (for garnish)
- Olive Oil (as needed)
- Salt & Black Pepper (to taste)
Instructions
- In a large pot, heat olive oil over medium-high heat. Add chopped onion, carrot, celery, and courgette/zucchini; sauté until soft and golden (about 15 minutes).
- Stir in garlic and cook for another minute. Add tomato puree and cook for an additional 1-2 minutes.
- Pour in stock and add chopped tomatoes, Worcestershire sauce, Italian seasoning, sugar, and seasonings. Simmer for about 20 minutes.
- Increase heat to bring to a rapid simmer; add tortellini and cook according to package instructions. Stir in fresh basil before serving.
