  • 5 cups low sodium chicken broth (divided)
  • 2 to 3 tablespoons cornstarch
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger powder
  • 2 large eggs (lightly beaten)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon freshly ground black pepper (to taste)
  • Red pepper flakes (for garnish)

Instructions

  1. Heat vegetable oil in a soup pot over medium-high heat. Add green onions and sauté for 1 minute.
  2. Stir in 4 cups of chicken broth and mix well.
  3. In a bowl, whisk together the remaining broth and cornstarch until smooth.
  4. Add the cornstarch mixture to the soup and blend thoroughly with garlic powder and ginger.
  5. Bring the soup to a simmer over high heat, stirring occasionally.
  6. Reduce heat to low; strain the beaten eggs slowly through a sieve into the soup, allowing them to cook for about 1 minute.
