  • 4 Tbs Vegan Butter
  • 1 tsp pure vanilla extract
  • 1/4 tsp almond extract
  • 3 Tbs granulated sugar
  • 3 Tbs light brown sugar
  • 1/4 cup finely ground almond flour
  • 1/4 cup all-purpose flour (can also use GF all-purpose flour)
  • Pinch of salt
  • 1/4 tsp cinnamon
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup praline pecan pieces
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine granulated sugar, light brown sugar, almond flour, all-purpose flour, salt, cinnamon, baking soda, and baking powder.
  3. Melt vegan butter in a microwave-safe bowl and mix in almond and vanilla extracts.
  4. Pour the melted mixture into the dry ingredients and stir until just combined.
  5. Fold in praline pecan pieces and dried cranberries until evenly distributed.
  6. Divide dough into portions and place on a lined baking tray.
  7. Bake for about 12 minutes or until lightly golden.
  8. Let cool briefly before serving.
