- 1 small yellow onion (finely chopped)
- 3 cloves garlic (minced)
- ½ teaspoon red pepper flakes
- ½ teaspoon smoked paprika
- 28 ounces canned diced tomatoes
- 2 cups fresh baby spinach
- 4 large eggs
- 3 ounces fresh mozzarella cheese (broken into pieces)
- Fresh dill (for garnish)
- Toasted bread slices
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped onion until translucent (3-4 minutes), then add minced garlic and cook until fragrant (20 seconds).
- Stir in red pepper flakes, smoked paprika, salt, and pepper; cook for another 30 seconds.
- Pour in diced tomatoes and simmer on medium-low for about 10 minutes until thickened.
- Add baby spinach and stir until well combined.
- Arrange mozzarella pieces in the sauce and create divots for each egg using the back of a spoon.
