Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, cream together the cold butter cubes with dark brown sugar and regular sugar until light and fluffy (about 4 minutes).
  3. Add molasses and egg to the creamed mixture and mix well for an additional minute.
  4. Gently fold in flour, baking soda, cornstarch, salt, cinnamon, ginger, nutmeg, cloves (if using), and chocolate chips.
  5. Roll the dough into balls (about 4–6 ounces each) and place them on a parchment-lined baking sheet.
  6. Bake for 8–10 minutes until slightly underdone; they will firm up as they cool.
  7. Allow cooling on the baking sheet for about 10–15 minutes before transferring to a wire rack.
