  • 11 ½ pound of white fish fillet (such as tilapia or trout)
  • 1 cup of stone-ground grits
  • 34 tablespoons of unsalted butter
  • 12 cups of white sharp cheddar cheese
  • 1 tomato, diced
  • ½ cup of red bell pepper, diced
  • ½ cup of chicken or vegetable broth
  • Garlic, minced
  • Lemon juice (optional)
  • Blackened or Creole seasoning

Instructions

  1. Season the white fish fillets with salt, pepper, and seasoning. Brush lightly with oil.
  2. In a non-stick frying pan over medium heat, melt butter or oil. Cook the fish fillets until golden brown on each side (about 4–5 minutes). Remove and set aside.
  3. In the same skillet, sauté minced garlic, diced tomato, red bell pepper until softened. Pour in chicken broth and add more seasoning to taste. Let simmer.
  4. In a medium saucepan, bring water, milk, and salt to a boil. Gradually whisk in grits; reduce heat and cover to simmer for about 20–25 minutes.
  5. Stir in butter and cheese into the grits until creamy.
  6. Serve the grits topped with fried fish and drizzled with the prepared sauce.
