Instructions

Step 1: Preheat the Oven
Preheat your oven to 300°F (150°C).
Line a baking sheet with parchment paper.

Step 2: Whip the Egg Whites
In a clean bowl, add egg whites and cream of tartar.
Beat with a mixer on high speed until stiff peaks form—this usually takes about 3–4 minutes.
Set aside.

Step 3: Make the Batter
In another bowl, mix the egg yolks, cottage cheese, vanilla extract, honey (if using), and a pinch of salt until smooth.
Gently fold in the whipped egg whites, a little at a time, being careful not to deflate them.

Step 4: Add the Blueberries
Gently fold the blueberries into the batter.

Step 5: Shape the Clouds
Spoon the batter onto the prepared baking sheet into 6–8 mounds, spacing them apart.
Use the back of a spoon to shape them slightly into thick rounds.

Step 6: Bake
Bake for 25–30 minutes, or until the cloud breads are set and lightly golden.

Let cool on the baking sheet for a few minutes.
