  • ½ cup cottage cheese (small curd, full fat or low fat)

  • 3 large eggs, separated

  • ¼ tsp cream of tartar

  • ¼ tsp salt

  • Optional: ¼ tsp garlic powder or Italian seasoning (for a savory twist)


Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 300°F (150°C).

  2. Line a baking sheet with parchment paper and set aside.

Step 2: Blend the Cottage Cheese Mixture
3. In a mixing bowl, blend cottage cheese with the egg yolks and salt until smooth. You can use a hand blender, whisk, or food processor.
4. Add any optional seasonings here if desired.

Step 3: Whip the Egg Whites
5. In a separate clean bowl, add the egg whites and cream of tartar.
6. Beat with an electric mixer until stiff peaks form. This will help give the bread its signature airy texture.

Step 4: Fold Gently
7. Carefully fold the whipped egg whites into the cottage cheese mixture, one-third at a time.
8. Use a spatula to fold slowly and gently—avoid deflating the egg whites.

Step 5: Form the Clouds
9. Scoop the mixture into even rounds on the prepared baking sheet. You should get about 6–8 “clouds.”
10. Use the back of a spoon to smooth and shape them slightly.

Step 6: Bake the Cloud Bread
11. Bake for 25–30 minutes, or until golden brown on top and firm to the touch.
12. Let cool for 5 minutes on the tray, then transfer to a wire rack to finish cooling.

Notes

Use Room-Temperature Eggs – They whip better and hold air longer.
Don’t Overmix – Folding too aggressively deflates the whites and makes flat clouds.
Add Flavor – Mix in herbs, spices, or grated cheese for extra depth.
