Ingredients

For the Bread:
1 cup plain Greek yogurt (unsweetened, full-fat or low-fat)
4 large eggs
¼ cup almond flour
¼ cup coconut flour
2 tsp baking powder
¼ tsp salt
½ tsp xanthan gum (optional, for better structure)
1 tbsp olive oil or melted butter (for moisture)

Optional Add-ins:
1 tbsp chia seeds or flaxseed meal (for fiber and texture)
1 tsp garlic powder or dried herbs (for savory flavor)


Instructions

Step 1: Preheat and Prepare
Preheat your oven to 350°F (175°C).
Line a loaf pan with parchment paper or lightly grease it.

Step 2: Combine Wet Ingredients
In a large bowl, whisk together Greek yogurt, eggs, and olive oil until smooth and fully incorporated.

Step 3: Add Dry Ingredients
Add almond flour, coconut flour, baking powder, salt, and xanthan gum.
Mix until a smooth batter forms. The batter will be thicker than traditional bread dough.

Step 4: Add Flavor or Texture
Fold in any optional add-ins like chia seeds, herbs, or garlic powder if using.
These can enhance flavor and boost nutritional content.

Step 5: Transfer and Smooth
Pour the batter into the prepared loaf pan.
Smooth the top with a spatula to even it out.

Step 6: Bake the Bread
Bake for 35–40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
The loaf should rise and form a nice dome.

 

Step 7: Cool and Slice
Let the bread cool in the pan for 10 minutes.
Remove from the pan and place on a cooling rack to cool completely before slicing.

Notes

Use Full-Fat Yogurt – Adds better texture and flavor.
Let It Cool – Slicing while hot can make it crumbly.
Add Structure – Xanthan gum helps hold the loaf together but is optional.
