  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season beef short ribs with salt and pepper, then sear until browned on all sides (about 3-4 minutes per side). Remove and set aside.
  2. Reduce heat to medium; add butter to the pot. Add onions and caramelize, stirring occasionally for about 25-30 minutes. Stir in minced garlic and cook for another minute.
  3. Return short ribs to the pot; add beef broth, Worcestershire sauce, bay leaf, and thyme. Bring to a simmer, cover, and cook on low for 2-3 hours until tender.
  4. Shred the meat from the bones before returning it to the pot.
