  • 2½ cups beef broth
  • 1 tbsp Dijon mustard
  • 1½ cups Gruyere cheese, grated
  • Fresh thyme

Instructions

  3. Caramelize onions: Add butter to the pot with onions and cook over medium heat with salt and brown sugar until golden brown (about 25–30 minutes).
  4. Add aromatics: Stir in garlic and thyme; cook for an additional minute. Add Worcestershire sauce, Dijon mustard, and flour.
  5. Deglaze: Pour in half of the dry grape juice; scrape the pot's bottom while simmering.
  6. Combine: Return beef to the pot with remaining grape juice, broth, bay leaves, and adjust seasoning as needed; bring to a gentle boil.
  7. Simmer: Lower heat to low; partially cover and simmer for about 90 minutes until beef is tender.
  8. Prepare topping: Preheat oven to 350°F (175°C). Slice baguette and brush with olive oil; toast until golden brown.
  9. Assemble: Ladle stew into bowls; spread Dijon mustard on baguette slices topped with cheese.
  10. Broil: Place bowls under the broiler until cheese is bubbly and golden brown.
