  • 2 tablespoons neutral oil
  • 3 lbs beef chuck roast
  • 4 yellow onions
  • 4 garlic cloves
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 6 cups beef stock
  • 1 demi baguette
  • 4 oz Gruyere cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut beef into 2-inch cubes and season with salt and pepper. Slice onions thinly.
  3. In a Dutch oven, heat oil and sear beef until browned; set aside.
  4. Caramelize onions in butter until golden brown, then add garlic.
  5. Stir in mustard, Worcestershire sauce, and flour; pour in grape juice and stock.
  6. Return beef to the pot, add bay leaves and thyme; cover and braise in the oven for about 3 hours.
