  • 1 whole chicken
  • 2 large onions (thinly sliced)
  • 6 sprigs fresh thyme or 1 ½ tsp dried thyme leaves
  • 2 tbsp Worcestershire sauce
  • 3 ½ tsp kosher salt
  • ½ tsp black pepper
  • 1 packet French onion soup mix
  • 3 cups chicken stock
  • 3 garlic cloves (minced)
  • 1 tbsp olive oil
  • For Gravy: 2 tbsp cornstarch + 3 tbsp water (mixed into a slurry)

Instructions

  1. Prepare your ingredients by slicing onions and mincing garlic.
  2. Sauté onions in olive oil over medium heat until caramelized (10–15 minutes), adding garlic in the last minute.
  3. Transfer onions to a slow cooker or Dutch oven; place the whole chicken on top.
  4. Season with thyme, Worcestershire sauce, salt, pepper, and soup mix. Pour in chicken stock.
  5. If using a slow cooker, cover and cook on low for about 8 hours; if using a Dutch oven, bake at 300°F (150°C) for about 4 hours.
  6. Once cooked, shred the chicken and stir in cornstarch slurry to thicken the gravy.
  7. Return shredded chicken to pot or serve over your choice of sides.
