- 1 whole chicken
- 2 large onions (thinly sliced)
- 6 sprigs fresh thyme or 1 ½ tsp dried thyme leaves
- 2 tbsp Worcestershire sauce
- 3 ½ tsp kosher salt
- ½ tsp black pepper
- 1 packet French onion soup mix
- 3 cups chicken stock
- 3 garlic cloves (minced)
- 1 tbsp olive oil
- For Gravy: 2 tbsp cornstarch + 3 tbsp water (mixed into a slurry)
Instructions
- Prepare your ingredients by slicing onions and mincing garlic.
- Sauté onions in olive oil over medium heat until caramelized (10–15 minutes), adding garlic in the last minute.
- Transfer onions to a slow cooker or Dutch oven; place the whole chicken on top.
- Season with thyme, Worcestershire sauce, salt, pepper, and soup mix. Pour in chicken stock.
- If using a slow cooker, cover and cook on low for about 8 hours; if using a Dutch oven, bake at 300°F (150°C) for about 4 hours.
- Once cooked, shred the chicken and stir in cornstarch slurry to thicken the gravy.
- Return shredded chicken to pot or serve over your choice of sides.
