  • 3 tablespoons Olive Oil
  • 8 Small Onions (Sliced)
  • 1 Rosemary Sprig
  • 2 Bay Leaves
  • 3 Thyme Sprigs
  • ½ cup Brown Sugar
  • ½ cup red grape juice
  • 1 tablespoon Balsamic Vinegar
  • 1 10.5 ounce can French Onion Soup
  • 8 slices Thick Sliced Bread
  • ½ cup Butter (Softened)
  • 1 cup Gruyere Cheese (Shredded)
  • 1 cup White Cheddar Cheese (Shredded)
  • Onion Jam
  • 3 tablespoons Grated Parmesan Cheese

Instructions

  1. Prepare the onion jam: Heat olive oil in a skillet over medium heat. Add sliced onions and cook until softened (about 10 minutes). Stir in rosemary, bay leaves, thyme, brown sugar, red grape juice, and balsamic vinegar. Reduce heat to low and simmer for 30 minutes until thickened.
  2. Assemble the sandwiches: Butter one side of each slice of bread. On the unbuttered side of four slices, layer gruyere cheese, white cheddar cheese, onion jam, and grated Parmesan cheese. Top with remaining bread slices (buttered side out).
  3. Cook the sandwiches: In the same skillet used for the onion jam, place assembled sandwiches over medium heat. Cook until golden brown on both sides and melted cheese (about 4–5 minutes per side).
