  • 1 lb. lasagna noodles
  • 8 oz. mozzarella cheese, grated
  • 6 cups sourdough bread, cubed
  • 1/4 cup olive oil
  • 1 teaspoon granulated garlic
  • Kosher salt and freshly cracked black pepper, to taste
  • 1/4 cup butter
  • 1/4 cup flour
  • 4 cups whole milk
  • 2 cups gruyere cheese, grated
  • 3 yellow onions, sliced
  • 3 tablespoons unsalted butter
  • 2 teaspoons fresh thyme
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1 quart good beef stock

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your lasagna pan.
  2. Toss cubed sourdough bread with olive oil and garlic; bake until golden brown.
  3. Cook lasagna noodles in salted water until al dente; set aside.
  4. Caramelize onions in butter until golden brown; mix in flour and gradually add beef stock along with thyme.
  5. For the béchamel sauce, create a roux with butter and flour, then whisk in milk until thickened; stir in gruyere cheese until smooth.
  6. Layer the lasagna starting with onion filling at the bottom, followed by noodles, more filling, croutons, and béchamel sauce; repeat twice before topping with additional cheese.
  7. Bake for about 35-40 minutes or until bubbly and golden brown.
