  • 1 pound ground beef
  • 1 pound ground chicken
  • 1 large egg (beaten)
  • ½ cup finely grated parmesan cheese
  • 2 tablespoons chopped parsley
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper
  • ½ cup whole milk
  • ½ cup fine dry breadcrumbs
  • 1 teaspoon minced garlic
  • ¼ cup finely diced yellow onion
  • 3 large yellow onions (thinly sliced)
  • 2 cups beef broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Gruyere cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine ground beef, ground chicken, beaten egg, parmesan cheese, parsley, kosher salt, black pepper, whole milk, breadcrumbs, garlic, and diced yellow onion. Mix until well combined.
  3. Shape the mixture into one-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake for about 20 minutes or until golden brown and cooked through.
  5. In a skillet over medium heat, melt butter and vegetable oil; add thinly sliced onions and cook until caramelized (15–20 minutes).
  6. Sprinkle flour over caramelized onions and stir for one minute; then add beef broth, seasoning with salt and pepper. Bring to a simmer.
  7. Add baked meatballs to the skillet; gently coat with sauce. Top with mozzarella and Gruyere cheese. Cover and simmer until cheese is melted (about 5 minutes).
  8. Garnish with chopped parsley before serving.
