Ingredients
• 2 lbs Yukon Gold or Russet potatoes, thinly sliced
• 2 large yellow onions, thinly sliced
• 2 tbsp butter
• 1 tbsp olive oil
• 1 packet (1 oz) French onion soup mix
• 1 cup beef or vegetable broth
• 1 cup shredded Gruyère or Swiss cheese
• ½ tsp garlic powder
• ½ tsp dried thyme
• ¼ tsp black pepper
• 1 tbsp chopped parsley (optional, for garnish)
• Nonstick cooking spray or oil for greasing
Instructions
Preheat your oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish with oil or nonstick spray.
Step 2: Caramelize the Onions
In a large skillet, melt butter with olive oil over medium heat.
Add the sliced onions and cook slowly for 20–25 minutes, stirring occasionally, until golden and caramelized.
Set aside once deeply browned and tender.
Step 3: Prep the Potatoes
While onions are cooking, slice potatoes into thin rounds, about ⅛ to ¼ inch thick.
Place them in a large bowl and toss with garlic powder, black pepper, thyme, and the French onion soup mix.
Step 4: Layer the Dish
Layer half of the seasoned potatoes into the greased baking dish.
Top with half the caramelized onions and half the shredded cheese.
Repeat with remaining potatoes, onions, and cheese.
Step 5: Add the Broth
Slowly pour the broth over the layered potatoes. It will soak down and add tons of flavor and moisture as it bakes.
Step 6: Cover and Bake
Cover tightly with aluminum foil and bake for 35 minutes.
Remove foil and bake for another 20–25 minutes until the potatoes are fork-tender and the top is golden brown and bubbly.
Step 7: Cool and Serve
Let the dish rest for about 10 minutes before serving.
Sprinkle with chopped parsley for a fresh finish, if desired.
