  • 2 cloves garlic (minced)
  • 2 tablespoons all-purpose flour
  • ½ cup dry white grape juice
  • 6 cups low sodium beef broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 8 slices baguette
  • 2 ounces Gruyere cheese (shredded)

Instructions

  1. Slice the yellow onions into ¼-inch thick rings.
  2. In a Dutch oven, heat butter and olive oil over medium heat.
  3. Add the sliced onions and cook gently until caramelized, about 25–30 minutes.
  4. Stir in minced garlic and flour; cook for another minute.
  5. Deglaze the pot with dry white grape juice, scraping up browned bits.
  6. Stir in beef broth, salt, pepper, thyme sprigs, and bay leaves; bring to a simmer.
  7. Let it simmer uncovered for 30 minutes.
  8. Toast baguette slices in the oven until golden brown.
  9. Remove thyme stems and bay leaves from the soup; serve in bowls topped with toasted baguette and cheese.
