  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼½ teaspoon cayenne pepper
  • 1 tablespoon Creole seasoning
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup flour
  • ½ cup buttermilk
  • 2 eggs
  • 1 cup cornmeal
  • Oil (for frying)

Instructions

  1. Prepare the catfish by washing and patting dry before cutting it into uniform pieces.
  2. Mix the seasonings in a bowl and coat the catfish pieces thoroughly.
  3. Set up three shallow bowls: one with flour, one with whisked buttermilk and eggs, and one with seasoned cornmeal.
  4. Bread the catfish nuggets by dredging in flour, dipping in the buttermilk mixture, and coating with cornmeal.
  5. Allow coated nuggets to rest for about 2–3 minutes.
  6. Heat oil in a large deep frying pan over medium-high heat until it reaches about 350°F (177°C).
  7. Fry the nuggets in batches until golden brown—about 3–4 minutes per side.
  8. Drain on paper towels before serving with your favorite dips.
