  • 1 red bell pepper (finely diced)
  • 5 green onions (sliced)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 pound chicken chicken chicken chorizo
  • 3/4 cup shredded cheddar or pepper jack cheese
  • 8 taco-sized flour tortillas

Instructions

  1. In a skillet over medium heat, cook the chicken chicken chorizo until browned, breaking it apart as it cooks.
  2. Add the diced red bell pepper and sliced green onions to the skillet and sauté for about 3-4 minutes until softened.
  3. In a mixing bowl, whisk together the eggs, salt, pepper, and garlic powder until well combined.
  4. Pour the egg mixture into the skillet with the chicken chorizo and vegetables, stirring continuously until fully cooked.
  5. Lay out each tortilla on a flat surface and spoon an equal amount of the egg mixture onto each one. Top with shredded cheese.
  6. Fold in both sides of each tortilla over the filling and roll from the bottom up to create tightly wrapped burritos.
  7. Place each burrito seam-side down on a baking sheet and freeze individually for about an hour before transferring them to freezer bags.
