For the Tacos:
- 8 small flour or corn tortillas, warmed
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or cotija)
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup shredded lettuce or cabbage
- 1 jalapeño, sliced (optional, for heat)
- Lime wedges, for serving
Instructions
Step 1: Cook the Beef
- Heat a large skillet over medium heat and melt butter.
- Add garlic and sauté for 30 seconds until fragrant.
- Add ground beef, breaking it up with a spoon, and season with salt, pepper, paprika, chili powder, and cumin.
- Cook until beef is browned, about 6-7 minutes. Drain any excess grease if necessary.
Step 2: Make the Honey BBQ Sauce
- In a small bowl, whisk together BBQ sauce, honey, Worcestershire sauce, and apple cider vinegar.
- Pour the sauce over the cooked beef and stir to coat.
- Let simmer for 3-4 minutes, allowing the flavors to meld.
Step 3: Assemble the Tacos
- Warm the tortillas in a dry pan or microwave.
- Fill each tortilla with honey BBQ beef.
- Sprinkle with cheese, red onion, cilantro, and shredded lettuce or cabbage.
- Add jalapeño slices if you like some heat!
- Serve with lime wedges and drizzle extra sauce on top if desired.
Notes
- Use Fresh Tortillas: Warmed tortillas hold the filling better and taste amazing.
- Balance the Sweetness: Add more vinegar or lime juice if you want more tang.
- Make it Spicier: Add extra chili powder, hot sauce, or chipotle powder.
- Try a Different Protein: Swap beef for chicken, shrimp, or pulled jackfruit for a twist!
