Ingredients
- 1 ½ lbs ground chicken
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (use panko or gluten-free if preferred)
- ¼ cup milk (or almond milk for dairy-free)
- 1 large egg, lightly beaten
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ cup chopped fresh parsley (optional)
- ¼ cup grated Parmesan cheese (for topping)
- 2 tablespoons olive oil (for drizzling)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C).
Step 2: Mix the Meatloaf Ingredients
- In a large mixing bowl, combine the ground chicken, ½ cup Parmesan cheese, breadcrumbs, milk, egg, minced garlic, Italian seasoning, salt, pepper, and chopped parsley (if using).
- Mix gently until just combined—avoid overmixing to keep the meatloaf tender.
Step 3: Shape the Meatloaf
- Transfer the mixture to a greased loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
- Press down slightly to form an even loaf.
Step 4: Add the Topping
- Sprinkle the remaining ¼ cup of grated Parmesan cheese evenly on top of the meatloaf.
- Drizzle with olive oil to help the Parmesan topping become golden and crispy.
Step 5: Bake the Meatloaf
- Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
- If the top is browning too quickly, cover loosely with aluminum foil during the last 15 minutes of baking.
Step 6: Rest and Serve
- Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
- Garnish with extra fresh parsley if desired.
