  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (use panko or gluten-free if preferred)
  • ¼ cup milk (or almond milk for dairy-free)
  • 1 large egg, lightly beaten
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup chopped fresh parsley (optional)
  • ¼ cup grated Parmesan cheese (for topping)
  • 2 tablespoons olive oil (for drizzling)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C).

Step 2: Mix the Meatloaf Ingredients

  • In a large mixing bowl, combine the ground chicken, ½ cup Parmesan cheese, breadcrumbs, milk, egg, minced garlic, Italian seasoning, salt, pepper, and chopped parsley (if using).
  • Mix gently until just combined—avoid overmixing to keep the meatloaf tender.

Step 3: Shape the Meatloaf

  • Transfer the mixture to a greased loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
  • Press down slightly to form an even loaf.

Step 4: Add the Topping

  • Sprinkle the remaining ¼ cup of grated Parmesan cheese evenly on top of the meatloaf.
  • Drizzle with olive oil to help the Parmesan topping become golden and crispy.

Step 5: Bake the Meatloaf

  • Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
  • If the top is browning too quickly, cover loosely with aluminum foil during the last 15 minutes of baking.

Step 6: Rest and Serve

  • Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
  • Garnish with extra fresh parsley if desired.
  • Serve warm with your favorite side dishes.

Notes

  • Don’t Overmix: Mixing the ingredients too much can result in a dense, tough meatloaf.
  • Use Fresh Garlic: For the best flavor, use freshly minced garlic instead of garlic powder.
