- 120g unsalted butter
- 80ml sunflower oil
- 170g light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tsp cinnamon

- 1 tsp baking powder
- 350g plain flour
- For the Topping: 50g unsalted butter, 40g light brown sugar, 75g plain flour, 1/2 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg
- For the Icing: 100g icing sugar, 1 tsp water
Instructions
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together unsalted butter and light brown sugar until fluffy. Mix in sunflower oil, egg, and vanilla extract until combined.
- In another bowl, whisk together cinnamon, ground ginger, nutmeg, baking powder, and plain flour. Gradually add this dry mixture to the wet ingredients until just combined.
- For the topping, mix softened butter, light brown sugar, plain flour, cinnamon, ginger, and nutmeg in a small bowl until crumbly.
- Drop cookie dough onto the prepared baking sheet about 2 inches apart; sprinkle topping over each dough ball.

- To finish, drizzle icing made from whisking icing sugar with water over cooled cookies.
