  • 7 oz vegan sour cream
  • 7 oz vegan cream cheese
  • 6 oz vegan chicken cubes
  • 2 Tbsp olive oil
  • 3 cloves garlic, diced
  • 1/3 cup onions, finely chopped
  • 2 ribs celery, chopped
  • 1/4 cup carrots, shredded
  • 1 handful spinach
  • 1 tsp Italian herbs
  • Salt and pepper to taste

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Sauté garlic, onions, and celery for about 2 minutes until fragrant. Add vegan chicken cubes, seasoning with salt and pepper; fry for another 3 minutes until browned.
  2. Pour in vegetable broth and bring to a boil. Add gnocchi and cook for about 2-3 minutes until they float.
  3. Stir in vegan cream cheese and sour cream along with carrots, Italian herbs, and spinach. Cook for an additional 2 minutes until well combined. Serve hot.
