Ingredients
For the Brownie Base:
- ½ cup unsalted butter – Melted.
- 1 cup sugar – For sweetness.
- 2 large eggs – Room temperature.
- 1 teaspoon vanilla extract – For flavor.
- 1/3 cup unsweetened cocoa powder – Adds richness.
- 1 cup all-purpose flour – The base for the brownies.
- ½ teaspoon salt – To enhance flavor.
- 1 teaspoon baking powder – For a little lift.
- ½ cup chocolate chips – For extra chocolaty goodness.
For the Biscoff Swirl:
- ½ cup Biscoff spread (cookie butter) – Creamy and smooth.
- 2 tablespoons unsalted butter – To melt the Biscoff and make it swirlable.
Instructions
Step 1: Prepare the Oven and Pan
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line with parchment paper for easy removal.
Step 2: Make the Brownie Batter
In a mixing bowl, whisk together the melted butter and sugar until smooth. Add the eggs, one at a time, and whisk until fully incorporated. Stir in vanilla extract.
Sift in the cocoa powder, flour, salt, and baking powder, then stir until just combined. Fold in the chocolate chips.
Step 3: Make the Biscoff Swirl
In a microwave-safe bowl, melt the Biscoff spread and butter together for about 20-30 seconds until smooth and pourable. Stir to combine.
Step 4: Assemble the Brownies
Pour the brownie batter into the prepared baking pan and spread it evenly. Then, drop spoonfuls of the melted Biscoff mixture over the brownie batter. Use a knife or toothpick to swirl the Biscoff into the brownies to create a marbled effect.
Step 5: Bake the Brownies
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (don’t overbake, as you want the brownies to be fudgy).
Step 6: Let Cool and Serve
Allow the brownies to cool in the pan for 10-15 minutes before cutting into squares. For extra indulgence, serve with a scoop of vanilla ice cream or a drizzle of extra Biscoff spread!
