Ingredients

2 large zucchini (sliced lengthwise into ½-inch thick “steaks”)

2 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

1 tsp Italian seasoning or herbes de Provence

½ tsp salt

¼ tsp black pepper

½ cup shredded mozzarella or Gruyère cheese

2 tbsp grated Parmesan cheese (optional)

Instructions
Step 1: Prep the Zucchini Steaks

Slice each zucchini lengthwise into 2–3 thick slabs, about ½ inch thick.

Pat dry with paper towels to remove excess moisture.

Brush both sides lightly with olive oil and season with salt and pepper.
Step 2: Sear the Zucchini
4. Heat a large skillet over medium-high heat.
5. Add zucchini steaks and sear for 2–3 minutes per side, until golden brown and lightly crisped.
6. Remove from skillet and set aside.
Step 3: Make the Garlic Herb Butter
7. In a small pan, melt butter over low heat.
8. Add minced garlic and Italian seasoning. Cook for 1–2 minutes until fragrant (do not brown the garlic).
9. Remove from heat.
Step 4: Assemble & Roast
10. Place seared zucchini steaks on a parchment-lined baking sheet or in the same oven-safe skillet.
11. Brush generously with garlic herb butter.
12. Top each steak with shredded cheese and sprinkle with Parmesan if using.
Step 5: Bake Until Melty
13. Preheat oven to 400°F (200°C).
14. Bake for 8–10 minutes, or until cheese is melted and bubbly.
15. Broil for 1–2 minutes at the end for a golden top, if desired.
