Ingredients
For the Chicken Marinade:

• Juice of 1 lemon
• 3 cloves garlic, minced

For the Tzatziki Sauce:
• 1 cup plain Greek yogurt
• ½ cucumber, grated and excess water squeezed out
• 1 garlic clove, minced
• 1 tbsp fresh dill or 1 tsp dried dill
• 1 tbsp lemon juice
• 1 tbsp olive oil
• Salt and pepper to taste
For the Bowls:
• 2 cups cooked rice (white, brown, or lemon rice) or quinoa
• 1 cup cherry tomatoes, halved
• 1 cup cucumber, diced
• ½ red onion, thinly sliced
• ½ cup Kalamata olives, pitted and halved
• ½ cup crumbled feta cheese
• Fresh parsley or mint for garnish
• Lemon wedges for serving
• Optional: Warm pita bread
Instructions
Step 1: Marinate the Chicken

In a bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.

Add the chicken and coat well. Cover and marinate in the fridge for at least 30 minutes, ideally 2–4 hours.
Step 2: Make the Tzatziki Sauce

Combine yogurt, grated cucumber (squeeze out water), garlic, dill, lemon juice, olive oil, salt, and pepper.
