Ingredients

For the Chicken Marinade:
• 1 ½ lbs boneless, skinless chicken thighs or breasts
• 3 tbsp olive oil
• Juice of 1 lemon
• 3 cloves garlic, minced
• 1 tsp dried oregano
• 1 tsp ground cumin
• ½ tsp smoked paprika
• Salt and black pepper to taste

For the Tzatziki Sauce:
• 1 cup plain Greek yogurt
• ½ cucumber, grated and excess water squeezed out
• 1 garlic clove, minced
• 1 tbsp fresh dill or 1 tsp dried dill
• 1 tbsp lemon juice
• 1 tbsp olive oil
• Salt and pepper to taste

For the Bowls:
• 2 cups cooked rice (white, brown, or lemon rice) or quinoa
• 1 cup cherry tomatoes, halved
• 1 cup cucumber, diced
• ½ red onion, thinly sliced
• ½ cup Kalamata olives, pitted and halved
• ½ cup crumbled feta cheese
• Fresh parsley or mint for garnish
• Lemon wedges for serving
• Optional: Warm pita bread


Instructions

Step 1: Marinate the Chicken

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.

  2. Add the chicken and coat well. Cover and marinate in the fridge for at least 30 minutes, ideally 2–4 hours.

Step 2: Make the Tzatziki Sauce

  1. Combine yogurt, grated cucumber (squeeze out water), garlic, dill, lemon juice, olive oil, salt, and pepper.

  2. Mix until smooth and creamy.

  3. Refrigerate until ready to use—the flavors improve as it sits.

Step 3: Cook the Chicken

  1. Heat a grill pan or skillet over medium-high heat.

  2. Cook chicken for 5–7 minutes per side, until browned and fully cooked.

  3. Let rest for 5 minutes, then slice into strips.

Step 4: Assemble the Bowls

 

  1. Start with a base of rice or greens.

  2. Top with sliced chicken, cucumbers, tomatoes, red onions, olives, and feta.

  3. Add a generous dollop of tzatziki and garnish with herbs and a squeeze of lemon.

  4. Serve with warm pita if desired.

Notes

Marinate Long Enough – More time means deeper flavor.
