  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp dried oregano

  • Salt and black pepper, to taste

For the Toppings:

  • ¾ cup crumbled feta cheese

  • 1 tbsp chopped fresh parsley or dill

  • Zest of ½ lemon

  • Juice of ½ lemon

  • 1 small garlic clove, finely grated (optional, for bold flavor)

  • Extra olive oil for drizzling

Optional Add-ins:

  • Sliced Kalamata olives

  • Chopped red onion

  • Tzatziki or yogurt for dipping

  • Crushed chili flakes for heat


Instructions

Step 1: Prep the Potatoes

  1. Peel and cut the potatoes into even sticks or wedges.

  2. Rinse under cold water to remove excess starch.

  3. Pat very dry with paper towels to ensure crispiness.

Step 2: Season and Bake (or Air Fry)

  1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).

  2. Toss fries with olive oil, garlic powder, onion powder, oregano, salt, and pepper.

  3. Spread in a single layer on a parchment-lined baking sheet or in your air fryer basket.

  4. Bake for 30–35 minutes, flipping halfway, or air fry for 18–22 minutes, until golden and crisp.

Step 3: Add the Feta and Finishing Touches

  1. Once fries are hot and crispy, transfer to a large bowl or platter.

  2. Immediately toss with crumbled feta cheese.

  3. Add lemon zest, lemon juice, grated garlic (if using), and chopped herbs.

  4. Drizzle lightly with olive oil and gently toss to coat.

Step 4: Serve and Enjoy

  1. Serve warm with extra lemon wedges on the side.
