Instructions
Step 1: Prep the Potatoes
-
Peel and cut the potatoes into even sticks or wedges.
-
Rinse under cold water to remove excess starch.
-
Pat very dry with paper towels to ensure crispiness.
Step 2: Season and Bake (or Air Fry)
-
Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).
-
Toss fries with olive oil, garlic powder, onion powder, oregano, salt, and pepper.
-
Spread in a single layer on a parchment-lined baking sheet or in your air fryer basket.
-
Bake for 30–35 minutes, flipping halfway, or air fry for 18–22 minutes, until golden and crisp.
Step 3: Add the Feta and Finishing Touches
-
Once fries are hot and crispy, transfer to a large bowl or platter.
-
Immediately toss with crumbled feta cheese.
-
Add lemon zest, lemon juice, grated garlic (if using), and chopped herbs.
-
Drizzle lightly with olive oil and gently toss to coat.
Step 4: Serve and Enjoy
-
Serve warm with extra lemon wedges on the side.
-
Pair with tzatziki, yogurt dip, or enjoy on their own!
Notes
Use Russet or Yukon Gold – They crisp up beautifully and hold their shape.
Dry Thoroughly – This prevents soggy fries and helps them crisp.
Crumble Feta Fresh – Pre-crumbled versions can be dry; fresh blocks offer better texture.
Toss While Hot – Warm fries absorb flavor and help soften the cheese.
Add a Sauce – A quick yogurt dip, garlic aioli, or herbed tahini is perfect on the side.
