1 can (14 oz) diced tomatoes (or 2 fresh tomatoes, grated)

2 ½ cups vegetable broth or water

2 tbsp tomato paste

1 tsp dried oregano

½ tsp ground cumin (optional, for warmth)

Juice of ½ lemon

2 tbsp chopped fresh dill or parsley (or both)
Instructions
Step 1: Prepare the Vegetables

Thinly slice the cabbage and chop the onion, garlic, and carrot.

Rinse the rice under cold water until the water runs clear.
Step 2: Sauté the Base

Heat olive oil in a large skillet or pot over medium heat.

Add chopped onion and cook until soft and translucent, about 5 minutes.

Stir in garlic and carrot, cooking for another 1–2 minutes.
Step 3: Add the Cabbage

Add the sliced cabbage in batches, allowing it to wilt down as you stir.

Once the cabbage has reduced, stir in tomato paste and oregano.

Step 4: Add Rice and Tomatoes
