  • 3 double rib lamb chops
  • 1/3 cup marmalade
  • 1/4 tsp ground ginger
  • 1 tsp chili oil
  • 1 tbsp soy sauce
  • 1 tbsp caramelized onion vinegar
  • pinch of salt
  • 1 tsp Dijon mustard
  • 1 tbsp olive oil

Instructions

  1. In a mixing bowl, combine marmalade, ground ginger, chili oil, soy sauce, salt, Dijon mustard, and caramelized onion vinegar. Mix well and set aside.
  2. Pat the lamb chops dry with a paper towel and season generously with salt and pepper.
  3. Heat olive oil in a cast iron skillet over medium heat. Add the seasoned lamb chops and sear each side for approximately 3 minutes until golden brown.
  4. Brush the marinade over the chops while cooking and check the internal temperature using a meat thermometer; aim for about 130°F for medium-rare.
  5. Remove from heat and let rest for 5 minutes before serving, drizzling any remaining glaze on top.
