Ingredients

For the Chicken Marinade:
2 lbs boneless, skinless chicken breast or thighs, cut into 1.5-inch cubes
½ cup plain Greek yogurt or sour cream
¼ cup olive oil
2 tbsp ranch seasoning mix
4 cloves garlic, minced
1 tbsp lemon juice
½ tsp black pepper
½ tsp paprika
½ tsp salt

For Grilling & Finishing:
½ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped (for garnish)
1 tbsp olive oil (for brushing skewers)
Wooden or metal skewers

Optional for Serving:
Lemon wedges
Dipping sauce (ranch or garlic aioli)
Grilled vegetables or side salad


Instructions

Step 1: Marinate the Chicken
In a large mixing bowl, combine Greek yogurt, olive oil, ranch seasoning, minced garlic, lemon juice, pepper, paprika, and salt.
Add the chicken pieces and toss until fully coated.
Cover and refrigerate for at least 1 hour (or up to overnight) to infuse flavor.

Step 2: Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.

Step 3: Preheat the Grill
Preheat your grill or grill pan over medium-high heat.
Brush the grates or pan lightly with olive oil to prevent sticking.

Step 4: Grill the Chicken
Place the skewers on the grill and cook for 5–6 minutes per side, turning once, until the chicken is fully cooked and lightly charred.
Brush with additional olive oil halfway through grilling for extra moisture.

Step 5: Add Parmesan & Garnish
Once grilled, remove skewers from the heat and immediately sprinkle with grated Parmesan cheese.
Garnish with fresh parsley and a squeeze of lemon juice, if desired.

 

Step 6: Serve & Enjoy
Serve hot with your favorite sides like grilled veggies, rice, or a light salad.
Offer dipping sauces like ranch or garlic aioli on the side for extra flavor.
