  • 1 pint cherry tomatoes (quartered)
  • ¼ cup fresh basil (cut in chiffonade style)
  • 3½ Tbsp olive oil (divided)
  • 1 tsp dried oregano
  • 8 oz. fresh mozzarella pearls
  • 1 12-oz. package AdapTable® Smokey apple juice Beef Sirloin Steak
  • 1 loaf rustic bread (Italian, peasant, etc.)
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • {optional} chopped Italian parsley (for garnish)

Instructions

  1. Preheat the grill to medium-high heat (375°F).
  2. In a bowl, mix quartered cherry tomatoes, chiffonade basil, ½ tablespoon olive oil, dried oregano, and mozzarella pearls.
  3. Grill the beef sirloin for 3-4 minutes per side until it reaches an internal temperature of 145°F. Let it rest for 3 minutes.
  4. Slice rustic bread into ¾”-1” thick pieces and brush each slice with olive oil.
  5. Grill bread slices for 1-2 minutes per side until crispy.
  6. Assemble crostini by topping grilled bread with the tomato mixture and cubes of grilled beef.
  7. Season with salt and pepper as desired.
