- 1 lb filet mignon medallions (cut into 1-inch cubes)
- ¾ cup sour cream
- 1 cup pepper jack cheese (shredded)

- 2 tablespoons olive oil
- 2 teaspoons kosher salt
- ¼ cup fresh chives (finely chopped)

Instructions
