  • 16 oz. ribeye steak (or your choice of beef)
  • 1 cup green enchilada sauce
  • 2 packets microwaveable brown rice
  • 15 oz. can black beans
  • Mini bell peppers
  • Fresh lime juice
  • Fresh cilantro
  • ½ Tbsp vegetable oil or canola oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • ½ Tbsp extra-virgin olive oil
  • 1 Tbsp fresh lime juice
  • ½ tsp ground cumin
  • ¼ tsp dried oregano
  • ¼ tsp smoked paprika

Instructions

  1. In a mixing bowl, combine vegetable oil, kosher salt, black pepper, onion powder, garlic powder, and paprika to make the marinade.
  2. Coat the ribeye steak with the marinade and let it sit for at least 10 minutes.
  3. Heat olive oil in a cast iron skillet over medium heat; add chopped mini bell peppers and sauté for about 5 minutes until softened.
  4. Preheat your grill pan over medium-high heat and grill the marinated steak for about 4-5 minutes on each side until cooked to your liking. Allow it to rest before slicing into strips.
  5. Assemble each bowl by layering cooked brown rice first, followed by sliced grilled steak, sautéed bell peppers, black beans, green enchilada sauce, lime juice, cumin, oregano, smoked paprika, and topped with fresh cilantro.
