  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup diced onion
  • 2 teaspoons garlic powder
  • 1 (8-ounce) can of tomato sauce
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté diced onions for about 3-4 minutes until translucent.
  3. Add ground beef and garlic powder; cook until browned, breaking apart with a spoon. Drain excess fat if desired.
  4. Stir in cooked rice, tomato sauce, shredded cheddar cheese, and chicken broth; heat until bubbling.
  5. Spray a casserole dish with non-stick spray and transfer the meat mixture into it evenly.
  6. Bake in the preheated oven for 15 minutes.
  7. In a mixing bowl, combine remaining cheese with sour cream until blended.
  8. Remove the casserole from the oven and spread the sour cream mixture on top.
  9. Return to oven; bake an additional 25-30 minutes or until bubbly.
