These Ground Beef Enchiladas are a classic Tex-Mex favorite, with seasoned ground beef wrapped in soft tortillas, smothered in rich enchilada sauce, and topped with melted cheese. Perfect for family dinners or gatherings, this dish is easy to make, packed with flavor, and sure to be a crowd-pleaser.


Instructions

Step 1: Cook the Ground Beef In a large skillet, heat the ground beef over medium heat, breaking it up with a spoon.
Add the chopped onion and garlic and cook for about 5 minutes until the beef is browned and the onions are softened.

Step 2: Season the Meat Stir in the taco seasoning mix and water.
Simmer for 5-7 minutes, until the mixture thickens slightly. Season with salt and pepper to taste. Remove from heat.

Step 3: Prepare the Enchiladas Preheat your oven to 375°F (190°C).
In a 9×13-inch baking dish, spread a thin layer of enchilada sauce on the bottom.
Take each tortilla and spoon about 2-3 tablespoons of the ground beef mixture into the center. Roll up the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

Step 4: Add Sauce and Cheese Once all the enchiladas are in the dish, pour the remaining enchilada sauce over the top, ensuring each enchilada is well-covered.
Sprinkle the shredded cheese evenly over the top of the sauce.

Step 5: Bake the Enchiladas Cover the baking dish with aluminum foil and bake for 20 minutes.
Remove the foil and bake for an additional 5-10 minutes until the cheese is melted and bubbly.

Step 6: Serve and Garnish Remove from the oven and let cool for a few minutes.
Top with sour cream, green onions, and chopped cilantro, if desired.
