  • 1 pound ground beef (80-90%)
  • 1 yellow onion (diced)
  • 3 jalapeños (diced and de-seeded)
  • 34 cups red enchilada sauce
  • 1 16-oz can refried beans
  • 2 cups shredded cheddar cheese
  • 6 large tortillas

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse rice under cold water and cook in a small pot with water until fluffy.
  3. In a large skillet, brown the ground beef with diced onion and jalapeños until cooked through; drain excess fat.
