Ingredients
- 1 pound ground turkey (94% lean)
- 10 medium-sized flour tortillas
- 2 ½ cups Oaxaca or Monterey Jack cheese
- 1 bell pepper (diced)
- ½ yellow onion (diced)
- ½ cup canned black beans
- ½ cup canned corn
- 4 tablespoons olive oil (divided)
- 1 batch turkey seasoning or 1 pack of taco seasoning
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon table salt
- ½ teaspoon onion powder
- ½ teaspoon pepper
Instructions
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
- Add ground turkey, diced bell pepper, and onion; cook until turkey is browned and excess moisture evaporates.
- Stir in black beans, corn, seasoning mix, tomato paste, and water; cook until heated through.
- Brush one side of each tortilla with oil; flip and layer cheese on half of each tortilla followed by the turkey mixture and more cheese.
- Fold the tortillas in half and cook in a skillet until golden brown on both sides.
- Cut into wedges and serve with your favorite toppings.
