  • 1 pound ground lamb, beef, or chicken
  • ¼ cup minced onion
  • 3 cloves garlic (minced)
  • 1 large egg
  • ½ cup crumbled feta cheese
  • 1 teaspoon Greek seasoning
  • 1 cup plain yogurt
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1 cup diced tomatoes
  • 1 cup diced cucumber

Instructions

  1. Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground meat with onion, garlic, egg, feta cheese, Greek seasoning, and salt. Mix well and form into small meatballs.
  2. Place meatballs on a baking sheet lined with parchment paper and bake for about 20 minutes until cooked through.
  3. For the tzatziki sauce, mix garlic and salt in a bowl before adding grated cucumber and drained yogurt. Stir in mint and dill; season with black pepper.
  4. To prepare the lemon rice, heat olive oil in a saucepan over medium heat. Add cooked rice along with lemon juice and salt; stir until heated through.
  5. Assemble cucumber salad by mixing diced tomatoes and cucumber with olive oil and salt.
  6. Serve each bowl layered with lemon rice at the base, topped with meatballs, tzatziki sauce, cucumber salad, hummus, and garnishes.
