- 2 large carrots, chopped into ¼-inch pieces
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 pound ground beef
- 4 cloves garlic, minced
- 2 teaspoons Italian seasoning
- 15-ounce can tomato sauce
- 15-ounce can diced tomatoes
- 8 ounces shredded cheddar cheese (divided)
Instructions
- Preheat the oven to 350°F and lightly grease a 13×9-inch baking dish.
- Cook rotini pasta according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté onion, carrots, and bell peppers until tender (about 8 minutes).
- Push veggies aside and brown the ground beef in the skillet until fully cooked; drain excess grease.
- Stir in garlic, Italian seasoning, salt, and pepper; cook for another 30 seconds.
- Add tomato sauce and diced tomatoes; mix well.
- Remove from heat and stir in one-third of the cheese followed by the cooked pasta until combined.
