  • 16 ounces rotini pasta
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 large carrots, chopped into ¼-inch pieces
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 pound ground beef
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 15-ounce can tomato sauce
  • 15-ounce can diced tomatoes
  • 8 ounces shredded cheddar cheese (divided)

Instructions

  1. Preheat the oven to 350°F and lightly grease a 13×9-inch baking dish.
  2. Cook rotini pasta according to package directions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Sauté onion, carrots, and bell peppers until tender (about 8 minutes).
  4. Push veggies aside and brown the ground beef in the skillet until fully cooked; drain excess grease.
  5. Stir in garlic, Italian seasoning, salt, and pepper; cook for another 30 seconds.
  6. Add tomato sauce and diced tomatoes; mix well.
  7. Remove from heat and stir in one-third of the cheese followed by the cooked pasta until combined.
  8. Transfer mixture to prepared baking dish and top with remaining cheese.
  9. Bake uncovered for about 20 minutes or until cheese is melted and golden.
