Ingredients

  • 3/4 cup mashed banana
  • 1 1/4 cups rolled oats
  • 1/4 cup flaxmeal
  • 1/4 cup nut butter (unsalted)
  • 1/4 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • Optional: 1/3 cup chopped nuts and/or 1/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare a baking sheet lined with parchment paper.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Combine the mashed bananas, nut butter, rolled oats, and flaxmeal in the bowl; mix well.
  4. Stir in vanilla extract, cinnamon, coconut sugar, and any optional add-ins like nuts or chocolate chips.
  5. Use a cookie scoop to form balls of dough and place them on the prepared baking sheet.
  6. Bake for 16–18 minutes or until golden brown.
  7. Allow cooling on the baking sheet for about 15 minutes before transferring to a cooling rack.
