Ingredients
- 4 cups fusilli pasta
- 1 tablespoon olive oil
- 3 cups corn kernels
- 1 jalapeno, finely diced
- 2 tablespoons fresh cilantro, chopped
- 1/2 cup cotija cheese (or feta cheese), divided
- 1/2 teaspoon chili powder
- Juice of 3 limes
- 1/2 cup Greek yogurt
- 2 tablespoons mayonnaise
- Salt to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add fusilli and cook until al dente; drain.
