For the Cones:

  • 6 small whole wheat tortillas

  • Olive oil spray

  • Muffin tin or cone molds (for shaping)

For the Taco Filling:

  • 1 lb (450 g) ground beef or ground turkey

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tbsp taco seasoning (store-bought or homemade)

  • ½ cup canned black beans, rinsed and drained

  • ½ cup corn (fresh, frozen, or canned)

  • Salt and black pepper, to taste

For the Toppings:

  • 1 cup shredded low-fat mozzarella or cheddar cheese

  • 1 cup cherry tomatoes, halved

  • 1 avocado, diced

  • ¼ cup sliced black olives (optional)

  • ¼ cup chopped fresh cilantro

  • 2 tbsp Greek yogurt or light sour cream

  • Lime wedges, for serving


Instructions

Step 1: Make the Taco Filling

  1. Heat olive oil in a skillet over medium heat.

  2. Add chopped onion and garlic, sauté for 2–3 minutes until softened.

  3. Add ground meat and cook until browned, breaking it up as it cooks.

  4. Stir in taco seasoning, black beans, and corn.

  5. Simmer for 2–3 minutes. Season with salt and pepper to taste. Set aside.

Step 2: Make the Tortilla Cones

  1. Preheat oven to 190°C (375°F).

  2. Wrap each tortilla into a cone shape (like an ice cream cone) and secure with toothpicks or foil.

  3. Place cones upside down in a muffin tin or balance them in a foil nest on a baking sheet.

  4. Spray lightly with olive oil and bake for 10–12 minutes until golden and crispy.

  5. Let cool for 2–3 minutes, then gently remove the toothpicks/foil.

Step 3: Fill and Top the Cones

 

  1. Spoon the warm taco filling into each tortilla cone.

  2. Top with shredded cheese so it melts from the warmth of the filling.

  3. Add fresh toppings like avocado, tomatoes, olives, and cilantro.

  4. Dollop with Greek yogurt or sour cream, and finish with a squeeze of lime juice.

Notes

Use Smaller Tortillas – They shape more easily and stay crispy.
Make-Ahead Friendly – Store taco filling in the fridge and reheat before stuffing.
