Ingredients

For the Breakfast Cake:
1 cup rolled oats (gluten-free if needed)
¾ cup whole wheat flour (or all-purpose)
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
¼ tsp salt
1 cup plain Greek yogurt
¼ cup honey or maple syrup
2 large eggs
1 tsp vanilla extract
¼ cup unsweetened applesauce or mashed banana
1 ½ cups fresh or frozen blueberries (do not thaw if using frozen)

For Topping (Optional):
2 tbsp rolled oats
1 tbsp brown sugar or coconut sugar
½ tsp cinnamon


Instructions

Step 1: Prep the Oven & Pan
Preheat your oven to 350°F.
Line your baking dish with parchment paper or grease lightly with nonstick spray.

Step 2: Mix Dry Ingredients
In a large bowl, whisk together rolled oats, flour, baking powder, baking soda, cinnamon, and salt.
Set aside.

Step 3: Combine Wet Ingredients
In another bowl, whisk together Greek yogurt, honey, eggs, vanilla extract, and applesauce or mashed banana.
Stir until smooth and well blended.

Step 4: Combine and Fold
Add the wet ingredients to the dry ingredients and mix gently until just combined.
Fold in the blueberries carefully to avoid breaking them.

Step 5: Add Topping (Optional)
In a small bowl, mix the topping oats, sugar, and cinnamon.
Sprinkle evenly over the batter in the pan.

 

Step 6: Bake the Cake
Pour the batter into the prepared baking dish.
Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a rack to cool completely.

Notes

Don’t Overmix – Mix until just combined for a tender crumb.
Use Greek Yogurt – Adds protein and moisture.
Fresh or Frozen Berries – Both work well; no need to thaw frozen ones.
