  • 1/2 cup Greek yogurt
  • 2 large bananas (mashed)
  • 1 large zucchini (shredded)

Instructions

  1. Preheat the oven to 180C/350F. Grease and line a 9 x 5-inch loaf pan with parchment paper.
  2. In a mixing bowl, combine flour, coconut sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the egg, Greek yogurt, and mashed bananas until well blended.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; some lumps are fine.
  5. Fold in the shredded zucchini and your chosen mix-ins until evenly distributed.
  6. Transfer the batter to the prepared loaf pan and bake for about 45-55 minutes or until a skewer comes out mostly clean.
  7. Allow cooling completely in the pan before slicing.
